Surprise a chocolate lover with some homemade vegan christmasy chocolate! An easy to make last minute gift that you do not need any chocolate mold for.
Ingredients:
- 200g plain vegan chocolate
- 3 tablespoons chopped hazelnuts or almonds
- Choose from one of the four spice options:
3/4 teaspoon gingerbread spice*
OR: 1 teaspoon cinnamon
OR: 1 teaspoon ground vanilla
OR: 1/2 teaspoon ground vanilla and ½ teaspoon cinnamon.
*Gingerbread spice: In case you can't find any at the store or online, mix your own! There is no official recipe, everyone has their own. I recommend using the following spices. Cinnamon should be the major part of the mix, followed by anise as the second major part, the other spices only in small amounts (sorry, I only have eyeball measured so far):
- Cinnamon
- Anise
- Ginger
- Nutmeg
- Cardamom
- Ground cloves
Instructions:
First, chop the chocolate (in case you're not using morsels). Melt bain marie style on the stove, on lowest temperature. When the chocolate is getting liquid, start stirring it. Keep stirring until completely liquid. Add the hazelnuts and stir in. Then add the spice of your choice and stir in.
Line a tray with parchment paper and place christmasy cookie cutters there. Use a teaspoon to fill the liquid chocolate into the cutters. You can spread it inside the cutters with the spoon, but avoid to touch to walls so the cookie cutters don't move.
Place the chocolate in the freezer for 20 minutes or in the fridge for 1 hour, then it should be completely firm. Keep refridgerated until eating or packaging the chocolate as a gift. Happy Holidays!
