Today I'm sharing another homemade plant milk recipe: delicious walnut milk. It's creamy, delicious and great in your coffee, for vegan sauces, baking and milk shakes! The seeds are very nutritious, they are for example a source of Source of Omega-3 Fatty Acids, magnesium and protein.
This tutorial guides you through the steps for making this nut milk. This dairy free, nut free and lactose free milk is compatible with a high carb low fat (HCLF) vegan diet, also known as Whole Foods Plant Based (WFPB), as suggested by T. Colin Campbell's "The China Study" and Dr. Michael Greger's Nutritionfacts.org.
In order to avoid food waste, this nut milk recipe works without straining and pulp, just like my sunflower seed milk and sesame milk (try them, both recipes are linked below!).

// WALNUT MILK //
● 1 heaped cup (4.25 oz./100g) walnuts, shelled and unsalted
● 4 cups water
● optional: sweetener (agave nector or maple syrup)
Method: Fill the walnuts into a bowl and cover them with water. Let them soak for at least 4 hours, ideally overnight. Strain and rinse the walnuts. Fill the walnuts and the 4 cups of water into a high speed blender.
First blend the mixture for 2 minutes on highest speed. Then stop and pulse for a few seconds to incorporate sesame seeds that might stick to the walls of the blender. Then blend it for another 2 minutes on highest speed. The result ist a creamy plant milk with a rich, nutty taste. You can keep it in the fridge for up to three days. Use it in your coffee, for creamy plant based sauces and for your vegan baking.
